We’d love to share with you a festive recipe for Scottish Cranachan. A delightful and hearty dessert packed with oats, honey and berries.
Ingredients:

- 350g frozen or fresh raspberries
- 50g oat flakes or the more traditional pinhead oatmeal
- 300ml double cream
- 2 tbsp natural yoghurt
- 2 tbsp Scottish honey
- 2 tbsp Scottish whisky
Recipe
- Tip the raspberries into a bowl and leave them on the side, Heat the oven to 180C
- Spread out the oats on baking parchment, and toast them in the oven until they start to smell sweet and nutty.
- Meanwhile, whip the double cream to soft peaks, and then use a dessert spoon to stir in the natural yoghurt, runny honey, whisky and most of the oats – leaving two tablespoons of the oats behind.
- Use 4 large wine glasses or tumblers and start to build up layers of cream, then raspberries.
- Finish with a layer of cream. Garnish with a final couple of raspberries, and the remaining oats on top. Delicious!
