We’d love to share with you this recipe for traditional Scottish cranachan. This delightful and hearty dessert is packed with oats, honey and berries and is topped off with a wee dram of whisky.
Ingredients:
-
- 350g frozen or fresh raspberries
- 50g oatflakes or the more traditional pinhead oatmeal
- 300ml double cream
- 2 tbsp natural yoghurt
- 2 tbsp Scottish honey
- 2 tbsp Scottish whisky.
Recipe
- Tip the raspberries into a bowl and leave them on the side, whilst heating the oven to 180C.
- Spread out the oats on baking parchment and toast them in the oven until they start to smell sweet and nutty.
- Meanwhile, whip the double cream to soft peaks, and then use a dessert spoon to stir in the natural yoghurt, runny honey, whisky and most of the oats – leaving two tablespoons of the oats behind.
- Use 4 large wine glasses or tumblers and start to build up layers of cream, then raspberries.
- Finish with a layer of cream. Garnish with a final couple of raspberries and the remaining toasted oats on top. Delicious!
