Pearl Barley Broth

Barley is a versatile, healthy and inexpensive whole grain, which is rich in fibre. So for those leftover festive meals this Christmas why not try this pearl barley broth? Or create a variation of your own?

Pearl Barley Broth with Carrot and Leek

Ingredients:

      • 15ml (1tbsp) vegetable oil
      • 450g carrots, peeled and sliced
      • 1 leek, cleaned and sliced
      • 1200ml chicken stock
      • 75g pearl barley
      • 175g cooked chicken, broken into small chunks
      • 175g cooked potatoes, chopped.

Recipe

  1. Heat the oil in a large pan, add the carrots and leeks, then saute over a medium heat for 4 minutes. Add the stock, pearl barley, chicken and potatoes and season well.
  2. Bring to the boil, then cover and simmer for 20 to 25 minutes or until the pearl barley and carrots are tender.
  3. Stir in the cooked vegetables, return to the boil and simmer for 1 minute.
  4. Stir in the parsley and season to taste before serving.

This tasty dish is perfect to have in front of the fire on a cold winter day!
